I made this refreshing mint smoothie this morning and it was pretty light and tasty for the amount of fat in it. I am always looking for good high fat keto breakfast recipes that don’t always involve eggs, meat, and butter. When you are on a keto diet, 70% of your calories must come from fat. So, here is my recipe for the Phat Coconut Mint Smoothie.
Serves 2
- 6 ounces Full fat coconut milk
- Half an avocado (2-3 ounces)
- 4 ounces or 1/2 cup Almond milk
- 2 TBsp Fresh mint leaves
- 8 drops Liquid Stevia
- 1/8 tsp Peppermint extract
- 2 TBsp MCT oil
Place all ingredients in a blender and blend away! Or, place all ingredients in a tall malt cup and blend with an immersion blender. Enjoy
You can make this into a paleo dessert type mint chocolate chip “milkshake” by adding some dark chocolate chips and a bit more sweetener like xylitol, erythritol or honey.
Want a lighter version? Omit the MCT oil and use light coconut milk.
